Scott Kallensee, Chartwells Director of Dining Services and Beth McCann, Chartwells Assistant Director of Dining Services presented Superintendent Howard Lerner, Director of Instruction Tara Bohan and the staff and students of New Bridges with a generous donation of raised beds and garden soil for our horticulture program. New Bridges students have been planting herbs and vegetables in the greenhouse and will soon fill the beds donated by Chartwells with summer vegetables. This week we harvested our first group of lettuce which was made into delicious salads for staff and students. Our school community is looking forward to expanding our crop making us a farm to table school!

Crossroads3 revStudents in the Food Service & Hospitality Program at Career Crossroads are making good use of the raised garden beds next to their building. Designed, built, and planted by students in the Landscape Design program at Bergen Tech Paramus, with assistance from their teacher Mr. Andee Dixon, the beds are part of our campus-wide Healthy Communities initiative. By next spring, a total of eight garden beds will be providing produce in spring and fall for students and staff at the Paramus Campus. A native plants area and an herb garden are in the planning stages as part of the initiative.

On a beautiful day in September, Teacher Kathy Wertalik led a nutrition class in the garden and then helped her students pick produce to make several dishes in their kitchen. Students sampled a salad of chicory, tomatoes, basil, and beans. Chicory was most definitely a love-it-or-hate-it ingredient!  Squash was used in several recipes, as were beans and peppers.

Students in the Career Crossroads Child Care program also visited the garden as part of their curriculum. They learned about healthy food choices and brought that information back to share with the youngsters at the BCTS Day Care Center.

 

We’re looking forward to a future project with Chartwells Food Service that will bring a Farmers Market to Crossroads next fall and will include a hands-on cooking demonstration using produce from the garden. Over the winter, we plan to make use of on-campus greenhouse facilities to plant seeds in late winter for early spring planting of different kinds of lettuce, Swiss chard, arugula, and spinach. This will provide students the opportunity to follow the life cycle of food from seed to harvest.
